About the event

Join us for an introductory koji masterclass led by Haruko, a koji specialist based in London. We will explore the role of koji in Japanese culture, and why it attracts people with its delicious and versatile use. We will show you the processes of making and using Koji such as shio-koji & amazake.

Your Host: Haruko, Koji Specialist

Haruko was trained with Nakaji, author of Koji for Life, and her approach toward koji growing is based on traditional Japanese methodology. She hosts various koji-related workshops from her North London residence, such as koji making & appreciation, miso, shoyu, doburoku and mirin, and takes pride in explaining the fundamentals (so that attendants can flexibly reproduce the learnings in their own settings). Her aspiration is that people will casually enjoy koji in their daily cooking, and koji will form a corner of the Western food culture in the future. She is a certified koji trainer from Nakaji’s koji academy.

  • Tasting different koji foods
  • An understanding of the magical transformative qualities of koji
  • Attendees will be able to take inoculated koji back home and grow in subsequent 48 hours.
  • Handout on how to use grown koji will be provided
