A masterclass to understand the fascinating world of fermented drinks. In this masterclass we will explore drinks that require SCOBY and those that rely on microbes present in fresh ingredients to kickstart fermentation. We will talk about the role of SCOBY in making kombucha, water kefir and milk kefir, explore how wild yeasts on plants in different cultures around the world create delicious wild sodas and drinks out of any sweet liquid, what starters we can use to create an effervescent drink and why we should all have a bottle of beetroot kvass in our fridge.
The magic carpet of microbial action will lead us on a journey of looking at tepache, tibicos, jun, refreshing smreka, boza, creamy milk kefir, amongst other things.

Jelena Belgrave is a fermentation educator, consultant and flavours tinkerer who firmly believes that microbial food preservation is an essential skill. She entwines stories and knowledge from her Balkan heritage with Japanese macrobiotic training and latest research in the scientific realm of gut health. Jelena is a member of the UK Fermenters Guild and regularly teaches hands-on and shares ferments in London, around the UK and the Balkans. Her workshops and events will always introduce you to new flavours, leave you inspired, excited and eager to find your new fermented condiment. *Most of the drinks we will talk about are generally non-alcoholic or have a tiny percentage of alcohol. We might mention vinegar in the masterclass, and that requires alcoholic fermentation at one stage.
