Spring is on the way, but we’re still feeling the chill. Warm up with Chef Jo's simple, quick and hearty soup, which will be ready in just 20 minutes!

Ingredients for 2 people:
A medium bunch of Cavolo Nero
2 Medium leeks
4-5 Garlic cloves
Parmesan (as much as you’d like!) or nutritional yeast (vegan option)
A good glug of olive oil
Lemon zest
A whole chickpea tin + juice
Vegetable stock
Thyme, bay leaf
A few sundried tomatoes (optional but will enhance deep flavours)
